<p><strong>Ingredients:</strong><br />
6 lbs. beef short ribs<br />
1 tablespoon black pepper<br />
2 tablespoons sea salt<br />
2 teaspoons ancho chili pepper<br />
4 large garlic cloves, minced<br />
1 teaspoon coriander</p>
<p><strong>Directions:</strong><br />
1. In a mixing bowl combine all spices, mix well.<br />
2. Rub mixture over the ribs and refrigerate over night.<br />
3. Preheat charcoal grill, arrange coals for indirect heat. The temperature should be approximately 275 degrees.<br />
4. Slow cook the ribs, flipping only once for 2 &#8211; 2 1/2 hours or until the reach desired doneness.</p>

<p><strong>Ingredients:</strong><br />
2 slabs beef ribs<br />
1 tablespoon salt<br />
2 teaspoons garlic powder<br />
1/2 cup brown sugar<br />
1 cup apple juice<br />
3 cups plain BBQ sauce<br />
1/2 cup maple syrup</p>
<p><strong>Directions:</strong><br />
1. Mix salt, garlic powder, and brown sugar together in a mixing bowl. Rub mixture over ribs, wrap in plastic rap and refrigerate overnight.<br />
2. Preheat grill, arrange coals for indirect heat.<br />
3. Place ribs on the grill and smoke for approximately 2 hours.<br />
4. In a medium sauce pan combine apple juice, BBQ sauce and maple syrup. Bring to boil and then simmer for 10 minutes.<br />
5. During last 1/2 hour of cooking brush ribs with mixture every 5 minutes. Flip ribs only once. Remove and serve when thoroughly cooked.</p>
